I remember that I got a M10 and M12 nut but none fit the banjo bolt that was holding the line to the slave cylinder.

Chances are you had the wrong M10 nut.
M10 x 1.5 is coarse thread and my guess as to what you had on hand.
M10 x 1.25 is fine thread and what is needed to fit the banjo bolts

Fine thread is less common than coarse.

Yeah, tried to get some stainless M10 x 1.25 Nyloc nuts at the nut and bolt store, then Amazon. No dice. Amazon has lots of M8 x 1.25 and lots of M10 x 1.5, but no M10 x 1.25!

Looks like they are only available on eBay from across the pond.

One of the reasons for my original post about converting :)
 
Standard pitch for M10 is 1.5 fine is 1.25 and very fine is 1.0. Usuallly the the fine pitch for a size is the standard pitch of the size below. M10x1.25 and M8x1.25
