I always shoot for cardboard colored tan...white/white is a lean condition...so, not enough fuel OR too much air...have you checked for leaks around the boots? Only true way to know is to stick a sniffer up the pipe and get readings at various throttle positions...plug reading is not an exact...
I don't think it's electrical if it runs fine when on the gas (but anything is possible)...sounds more like a jetting issue...pilots to be specific...major question: Do you need to choke it when cold to fire it?
Well...It's VERY different from the typical motorcycle, but VERY much like a 4-wheeler or snowmobile (I own those as well)...more like a sled on wheels...same ridiculous low to mid grunt and less on top...It's very stable, tracks well (when you replace the stock Kenda fronts) and is comfortable...

At 6k you should certainly "feel" the vboost kick in...it's not a peel your ass off the seat kinda boost, but you most certainly can feel it...if not they it's not functioning properly...
Handling - hands down radials are THE BEST handling mod for the vmax...as mentioned, a modified or new...
Was thinking of adding a dual (Holeshot exhaust) wideband A/F meter kit. A see a few options...was curious what folks were using and their set-up?
Thx

Well...It really depends on what's available to work with as far as space and mounting points. The Gen1 was designed to have one, the Gen2 not so much...I'd think exhaust routing would be the greatest obstacle...I don't own a Gen2, so to comment further I'd need to see some pics of the area in...
Time to check the valves??? Do you know anybody with a Vmax close by that you could do a carb swap? I'd be curious how it runs with a known running set of carbs installed...
