Not trying to start a pissing match. 150 is a good start for the main, a little less might still be better. Not knowing about the rest of the plumbing, any VMAX that was running a 160 main most likely had a very lean needle, a mighty small air jet, and I will not even guess on the slow fuel jet...
Sounds like you will need to change all the jets + the metering rods.

You need to pull your float bowl.
Back off the screw that holds the float in place.
Remove the float and needle assembly, paying attention to the wire clip that holds the needle to the float. I am convinced that it makes a difference which way it is turned.

The sound is the boost cycling on and off. Watch the boost assembly, turn on ignition, when the cable is pulled all the way open, unplug it before it cycles back.
