Bike runs but will NOT stay running. Carbs work great on another one but not on this one.

Sorry to hear of your health issue. I hope you are able to have that addressed and get better.

Does the bike start, and then die after say, 10 minutes? Like you turned-off the ignition? After it quits,does it crank OK, but not re-start right-away? Then, after an hour, it will start right-up?

That could be an ignition pick-up going bad, when it gets warm, it shorts-out. An aftermarket one is the ticket there as the stocker is $$$$.
 
Sounds like it could be an interruption in the fuel delivery system. Have you changed the fuel filter? How about removing the fuel hose to the carbs, and seeing if the pump works to pump a good volume into a receptacle? I suggest any fuel delivery troubleshooting to be done outside, w/a water hose charged and within-reach or a 5 lb dry chem extinguisher.
 
I agree with you on a fuel delivery problem. Changed the fuel pump with one from my other bike and yes new filter and fuel lines.
