How far do you let your tread wear down before replacement?

if you ever ride in the wet I would never go below 1mm, and that's risky already

Generally I replace when it hits about 3/32". I tend to keep track by using the penny trick. Depth to the top of Abe's head is about 2/32". To the top of the Lincoln memorial is about 6/32", obviously the coin is upside down. I ride rain or shine and the roads here are an inconsistant smoothness. One minute your fine, the next you might as well be on glass.
