Yes, but it's not practical for most.

if done with a proper machine i say yes but beware of metal temper.

Yes Fred, I would be worried about that, the heat from grinding could take the temper out of the pad, suppose it would depend how much of a cut you would take off each time!
You want to grind the bottom side of the shim so you should be just fine.
