where does the little metal piece for the center stand get bolted to when installing a center stand?
the piece the spring hooks onto.

It does not bolt to anything. It slips over a stud under the bike between the centerstand mounting points. You can see where it goes if you look under the center of the stand area. The open end of the slotted stud points to the right side of the bike.
