Your best bet would be something like a Haynes manual - they have good step by step instructions and it's all based on a strip down and rebuild.

the service manual is available on the site and elsewhere.

cyclepedia.com also has a manual coming out soon (hopefully).

i've had good luck with the haynes and service so far.
