Is there a how to guide out there on how to replace the gaskets?

I don't think so. But here's one for you:

1. Remove covers
2. Take off old gasket
3. Remove all traces of old gaskets using scraper and/or solvent, being careful not to damage any mating surfaces
4. Fit new gasket
5. Tighten cover bolts to specified torque
