this is slightly of topic but will the amount of oil used greatly effect the ride? My manual calls for 620 cc of oil. I have been using 600cc. Is there allot of difference in 20cc?

Less oil will make it softer, as the air volume above the oil increases it acts as a progressive spring. 20cc is OK unless the forks bottom with big bumps.
 
Should work just fine.
The Max-EZ fluid didn't have the Viscosity on the MSDS to compare with some of the other fluids but would bet it's going to be in the 10-15 range depending on the temperature.
